Author: DR.RIPU DAMAN
Abstract: This research examined the pattern of growth, mycelial growth of Monascus purpureus, and temperature & pH on pigment development with the help of pea peel waste as a substratum in submerged cultures. It was observed that on the 16th day of incubation a maximized red pigment was released. The favorable temperatures in the experimented temperatures for microbial growth and pigment development were 30 ° C. Besides, a peak pigment of 5.5 pH was reported.
