Application Of Taguchi Method In Supercritical Carbon Dioxide Extraction Of Coffee Bean

Abstract: Objective: Extraction of coffee beanusing supercritical carbon dioxide (SC-CO2 ) was investigated using Taguchi method to provide information about the optimum extraction condition. Methods: L9 Taguchi orthogonal array design was used to determine the optimum extraction condition. Effects of extraction pressure and temperature and moisture content of material on oil yield were investigated at levels ranging between 250-350 bar, 60-80°C and 20-40% w.b., respectively. Results: According to Taguchi method, the highest oil yield from SC-CO2 extraction was obtained at a pressure of 350 bar, temperature of 80°C and coffee bean’s moisture content of 30% w.b. Based on S/N ratio calculation and ANOVA, the most influencing parameters in maximizing coffee bean oil yield were moisture content, followed by extraction temperature and pressure. Conclusion: In this study,L9 array of Taguchi Method was successfully applied to optimize the SC-CO2 extraction process on coffee bean.
