Characterization of Nanoparticle-encapsulation of ß-carotene Isolated from Daucus carota

ß-carotene is a potent lipophilic nutraceutical which has low bioaccessibility and bioavailability caused by poor water solubility, stability, sensitivity to light, temperature and pH. Nano-encapsulation can protect it from degradation and retain a compound's functional property . The aim of this study is to characterize the ß-carotene from Daucus carota root which is nano-encapsulated with the chitosan matrix with TPP. ß-carotene was isolated from Daucus carota root origin from local vegetable plantations, Palembang, Indonesia. Then, it was encapsulated by entrapping it with a chitosan-TPP solution using inclusion complexation method with variants 0.1%, 0.25%, and 0.5%, followed by ß-carotene. Size and morphology of ß-carotene were analyzed using particle size analyser (PSA) and transmission electron microscopy (TEM). Results showed that the particle size of the encapsulation of the chitosan increases as long as the ß-carotene concentration. Only the variant 0.5% detects the level of ß-carotene as much as 0.03 mg/kg. ß-carotene encapsulated with chitosan-TPP appear in a spherical shape with a size of 20 nm.
