Author: JAMALUDDIN , NUR’AENI, AGUSTINUS WIDODO, WA ODE SITTI MUSNINA
Abstract: The human body is in desperate need of amino acids which function to repair damaged tissue after injury, protect the liver from various toxic substances, and reduce ammonia levels in the blood. One source is Eel fish (Anguilla bicolor) from Lake Poso. This study aims to determine comparison amino acid levels of Eel fish (Anguilla bicolor) in the phase of yellow eel and silver eel. Testing of amino acid levels using High Performance Liquid Chromatography (HPLC) method. The results showed that the amino acid levels in both samples were different. Eel fish (Anguilla bicolor) in the yellow eel and silver eel phases contain 17 amino acids consisting of 9 types of essential and 8 types of non-essential. Significantly different of amino acids are histidine, arginine, glycine, glutamic acid, alanine, phenylalanine, threonine, methionine.
