Abstract:

The paper studies the main factors affecting consumers' choice of innovative food products. The study is based on the analysis of data from a questionnaire conducted in Moscow in 2019 (volume - 513 people). The differentiation of the significance of factors depending on the age of the respondents, as well as on belonging to different types of consumers according to E. Rogers. The attitude of respondents to tasting products in stores is investigated. The results of the study can be used to form a mechanism for the diffusion of innovations in the food market.
