Abstract:

Based on the analytical and experimental researches, the factors that influence the formation of the technolog-ical properties of Pleurotus ostreatus mushrooms have been determined. It was found that the technological properties of this type of mushroom depend on the conditions and timing of cultivation and storage, as well as on the structure of individual parts of the fruiting body and on the chemical composition, namely, the content of proteins, fiber and water, including bound water.
