Abstract:

The aim of this study is the analytical substantiation of the perspective trend – the development of specialized
fermented products for elderly (gerodietetic) nutrition. On the basis of the conducted researches the basic
components necessary for a diet of persons of the advanced age are established: animal proteins, polyunsaturated
fatty acids, vitamins, certain minerals, etc. At the same time the role of probiotics and antioxidants is especially
allocated. Biotechnology of the specialized product enriched with probiotics immobilized in gel of biopolymers,
dietary fibers as a prebiotic for increase of viability of cells of probiotics and vitamin and mineral complex-as an
antioxidant is developed. To expand the range of bionavitas and improve its functional properties, has been used
plant-based ingredients such as blueberries and currants in the form of syrups. Presents recipes and biotechnology
bionavitas for elderly persons nutrition.
